Keto Salmon and Chard Extravaganza

This is a keto-friendly feast that’s going to blow your bloody socks off. We’re talking perfectly cooked salmon, vibrant chard, and a sneaky canned fish twist that’ll have you begging for more. Let’s get to it!
Ingredients
- 4 salmon fillets
- 2 bunches of chard, roughly chopped
- 1 can of tuna, drained
- 1 can of sardines, drained
- Salt and pepper to taste
- Olive oil
- 4 garlic cloves, minced
- 1 lemon, zest and juice
- Fresh dill, chopped (optional)
- Butter
Instructions
- Season the salmon fillets with salt, pepper, and a drizzle of olive oil.
- Preheat your sous vide machine to 125°F (52°C).
- Place the seasoned salmon fillets into vacuum-seal bags with a pat of butter and a sprig of dill.
- Seal the bags and submerge them in the sous vide bath for 45 minutes.
- While the salmon’s cooking, heat a large skillet over medium heat with a splash of olive oil.
- Add the minced garlic and sauté until fragrant.
- Toss in the chard and cook until wilted, about 5 minutes. Season with salt and pepper.
- Flake the tuna and sardines into the skillet with the chard. Stir gently to combine and heat through.
- Add the lemon zest and juice for a punch of acidity.
- Once the salmon is done, remove it from the sous vide bags and give it a quick sear in a hot pan with a bit of butter to get a nice crust.
- Plate the salmon fillets on a bed of the chard and canned fish mixture.
- Garnish with more fresh dill if desired.
