Keto Tofu and Brussels Sprout Stir-Fry

Tofu, Brussels sprout, baking powder, stove
<strong>Prep the Tofu</strong>: Begin by draining the tofu and pressing it to remove excess moisture. Once drained, cut the tofu into bite-sized cubes.
Ingredients
- 1 block of tofu, drained and cubed
- 2 cups of Brussels sprouts, trimmed and halved
- 1 teaspoon of baking powder
- Cooking oil for the stove
Instructions
- Prep the Tofu: Begin by draining the tofu and pressing it to remove excess moisture. Once drained, cut the tofu into bite-sized cubes.
- Crisp the Tofu: In a bowl, toss the tofu with baking powder until evenly coated. Heat a non-stick skillet over medium-high heat and add a small amount of oil. Add the tofu to the skillet and cook until golden and crispy, then set aside.
- Cook the Brussels Sprouts: In the same skillet, add a little more oil if needed and place the Brussels sprouts in a single layer, cut side down. Cook until they are golden and slightly charred.
- Combine and Season: Once the Brussels sprouts are cooked, add the crispy tofu back into the skillet. Toss everything together and season with salt and pepper to taste.
- Serve: Transfer the stir-fry to a serving dish and enjoy!
