Ingredients
- 1 lb thinly sliced beef (ribeye or sirloin works best)
- 1/4 cup soy sauce
- 2 tbsp sesame oil
- 2 tbsp brown sugar
- 2 tbsp gochujang (Korean red chili paste)
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp rice vinegar
- 1 tbsp vegetable oil
- 8 small flour or corn tortillas
- 1 cup kimchi, chopped
- 1 cucumber, thinly sliced
- 2 green onions, chopped
- Fresh cilantro, for garnish
- Sesame seeds, for garnish
Instructions
- In a large bowl, combine soy sauce, sesame oil, brown sugar, gochujang, garlic, ginger, and rice vinegar. Mix well.
- Add the thinly sliced beef to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours.
- Heat the vegetable oil in a large skillet or grill pan over medium-high heat.
- Add the marinated beef to the skillet in a single layer. Cook for about 2-3 minutes on each side until the beef is nicely caramelized and cooked through. Remove from heat.
- Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable. Alternatively, wrap them in a damp paper towel and microwave for 20-30 seconds.
- Place a generous amount of the cooked beef onto each tortilla.
- Top with chopped kimchi, cucumber slices, and green onions.
- Garnish with fresh cilantro and sesame seeds.
