Korean-Inspired Chicken and Potato Stir-Fry

This delicious and healthy Korean-inspired stir-fry is perfect for a family meal. Using fresh, seasonal ingredients, this dish is not only tasty but also nutritious. Cooking and eating together has never been this fun and fulfilling!
Ingredients
- 4 chicken breasts, sliced thinly
- 4 medium potatoes, peeled and diced
- 2 onions, sliced
- 2 tablespoons soy sauce
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced
- 1 tablespoon honey
- 2 tablespoons vegetable oil
- 1 spring onion, chopped (for garnish)
- Sesame seeds (for garnish)
Instructions
- Slice the chicken breasts thinly.
- Peel and dice the potatoes.
- Slice the onions.
- Mince the garlic and ginger.
- Heat 1 tablespoon of vegetable oil in a wok over medium heat.
- Add the diced potatoes and stir-fry until they are golden brown and crispy on the outside.
- Remove the potatoes from the wok and set aside.
- In the same wok, add the remaining tablespoon of vegetable oil.
- Add the sliced chicken breasts and stir-fry until they are cooked through and slightly browned.
- Remove the chicken from the wok and set aside.
- Add the sliced onions to the wok and stir-fry until they are soft and translucent.
- Add the minced garlic and ginger, and stir-fry for another 1-2 minutes until fragrant.
- Return the cooked chicken and potatoes to the wok.
- Add the soy sauce, gochujang, sesame oil, and honey.
- Stir everything together until well combined and heated through.
- Transfer the stir-fry to a serving dish.
- Garnish with chopped spring onion and sesame seeds.
