Korean-Inspired Edamame and Pumpkin Stew

This Korean-inspired recipe brings together the comforting flavors of edamame and pumpkin in a hearty stew that’s perfect for sharing with loved ones.

Ingredients

  • 2 cups edamame
  • 1 small pumpkin, diced
  • 1 teaspoon baking powder
  • Water
  • Salt and pepper to taste

Instructions

  1. In a pressure cooker, add the edamame and diced pumpkin.
  2. Add enough water to cover the edamame and pumpkin.
  3. Sprinkle in the baking powder and season with salt and pepper.
  4. Close the pressure cooker and cook on high pressure for 8-10 minutes.
  5. Once done, release the pressure and carefully open the cooker.
  6. Give the stew a gentle stir and adjust the seasoning if needed.
  7. Serve the stew hot, with steamed rice or crusty bread on the side.
