Ingredients
- 2 cups kidney beans (cooked or canned)
- 2 medium turnips, peeled and diced
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon black pepper
- 4 cups vegetable broth
- 2 tablespoons gochujang (Korean chili paste)
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
- Fresh cilantro (for garnish)
Instructions
- Prepare the ingredients. Peel and dice the turnips. Finely chop the onion. Mince the garlic and grate the ginger.
- Sauté the aromatics. Heat the sesame oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent, about 5 minutes.
- Add the turnips and kidney beans. Add the diced turnips to the pot and cook for another 5 minutes. Stir in the cooked kidney beans.
- Flavor the stew. Add the soy sauce, black pepper, and gochujang to the pot. Stir well to combine all the flavors.
- Simmer the stew. Pour in the vegetable broth and bring the stew to a boil. Reduce the heat to low and let it simmer for 20-25 minutes, or until the turnips are tender.
- Blend the stew (optional). For a smoother texture, use a blender to blend half of the stew and then return it to the pot. Alternatively, you can use an immersion blender directly in the pot to achieve your desired consistency.
- Serve and garnish. Ladle the stew into bowls. Garnish with sliced green onions, sesame seeds, and fresh cilantro.
This Korean-inspired kidney bean and turnip stew is a delicious way to enjoy a nutritious meal with your family. The blend of fresh ingredients and bold flavors makes it a perfect dish for any season. Enjoy cooking and eating together!
