- 200g green beans, trimmed and cut into bite-sized pieces
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons gochujang (Korean chili paste)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 4 cups fish stock (or water)
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
- Salt and pepper to taste
Instructions
- Prepare the Ingredients: Peel and cube the potatoes. Trim and cut the green beans into bite-sized pieces. Finely chop the onion, mince the garlic, and grate the ginger.
- Cook the Vegetables: Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until fragrant and the onion is translucent, about 5 minutes.
- Add the Potatoes and Beans: Add the cubed potatoes and green beans to the pot. Stir to combine with the aromatics. Cook for another 5 minutes, stirring occasionally.
- Add the Flavorings: Stir in the gochujang, soy sauce, and sesame oil. Mix well to coat the vegetables.
- Add the Stock: Pour in the fish stock (or water) and bring to a boil. Reduce the heat to a simmer and cook until the potatoes are tender, about 15-20 minutes.
- Cook the Cod: Season the cod fillets with salt and pepper. Gently place the cod fillets into the simmering stew. Cover and cook until the fish is opaque and flakes easily with a fork, about 8-10 minutes.
- Finish and Serve: Taste the stew and adjust seasoning with salt and pepper if needed. Ladle the stew into bowls and garnish with sliced green onions and sesame seeds.
