This Korean-inspired recipe combines tender turkey breast with nutritious kale and crunchy nuts for a flavorful and satisfying stir-fry.

Ingredients

  • 1 pound turkey breast, thinly sliced
  • 4 cups kale, chopped
  • 1/2 cup almonds, chopped
  • 1/2 cup walnuts, chopped
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • Cooked rice, for serving

Instructions

  1. Heat a large skillet or wok over medium-high heat.
  2. Add the vegetable oil, garlic, and ginger to the skillet and cook for 1 minute.
  3. Add the turkey breast slices to the skillet and cook until browned and cooked through, about 5-7 minutes.
  4. Remove the turkey from the skillet and set aside.
  5. In the same skillet, add the kale and cook until wilted, about 3-4 minutes.
  6. Return the turkey to the skillet with the kale.
  7. In a small bowl, mix together the soy sauce, sesame oil, and honey. Pour the sauce over the turkey and kale in the skillet.
  8. Add the chopped almonds and walnuts to the skillet and toss everything together until heated through.
  9. Serve the Korean turkey and kale stir-fry over cooked rice.
