Ingredients
- 1 cup wild rice
- 2 cups water or chicken broth
- 1 lb (450g) chicken breast, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon gochujang (Korean red chili paste)
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon vegetable oil
- 1 green onion, chopped (for garnish)
- Sesame seeds (for garnish)
Instructions
- Rinse the wild rice under cold water. In a medium pot, combine the wild rice and water (or chicken broth). Bring to a boil, then reduce the heat to low, cover, and simmer for about 45-50 minutes, or until the rice is tender and the grains have split. Drain any excess liquid if necessary.
- In a mixing bowl, combine soy sauce, gochujang, sesame oil, honey, minced garlic, and grated ginger. Add the chicken pieces and marinate for at least 30 minutes to allow the flavors to meld.
- Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, or until the chicken is cooked through and slightly caramelized.
- Once the chicken is cooked, reduce the heat to low and add the cooked wild rice to the skillet. Stir well to combine and heat through for another 2-3 minutes.
- Serve the wild rice chicken bowl hot, garnished with chopped green onions and a sprinkle of sesame seeds.
