Lemon Garlic Baked Cod

This recipe is a simple and delicious way to prepare cod, a versatile and mild-flavored fish. The combination of lemon and garlic adds a bright and tangy flavor to the dish. It's perfect for a quick and healthy dinner for four people.

Ingredients

  • 4 cod fillets
  • 2 lemons
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it with olive oil.
  2. Pat dry the cod fillets with paper towels to remove any excess moisture.
  3. Place the cod fillets in the baking dish and season them with salt and pepper on both sides.
  4. In a small bowl, combine the minced garlic, juice of one lemon, and olive oil. Stir well to mix the ingredients.
  5. Pour the garlic and lemon mixture over the cod fillets, making sure to coat them evenly.
  6. Slice the remaining lemon into thin rounds and place them on top of the cod fillets.
  7. Bake the cod in the preheated oven for about 15-20 minutes, or until the fish flakes easily with a fork.
  8. Once cooked, remove the baking dish from the oven and let it rest for a few minutes.
  9. Serve the lemon garlic baked cod hot, garnished with fresh parsley. Squeeze some extra lemon juice over the top if desired.
