Lemon Garlic Baked Cod

This recipe is a simple and delicious way to prepare cod, a versatile and mild-flavored fish. The combination of lemon and garlic adds a bright and tangy flavor to the dish. It's perfect for a quick and healthy dinner for four people.
Ingredients
- 4 cod fillets
- 2 lemons
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it with olive oil.
- Pat dry the cod fillets with paper towels to remove any excess moisture.
- Place the cod fillets in the baking dish and season them with salt and pepper on both sides.
- In a small bowl, combine the minced garlic, juice of one lemon, and olive oil. Stir well to mix the ingredients.
- Pour the garlic and lemon mixture over the cod fillets, making sure to coat them evenly.
- Slice the remaining lemon into thin rounds and place them on top of the cod fillets.
- Bake the cod in the preheated oven for about 15-20 minutes, or until the fish flakes easily with a fork.
