Ingredients
- 4 cod fillets
- 2 lemons
- 4 large potatoes
- Olive oil
- Salt and pepper

- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes. Cut them into bite-sized pieces and place them on a baking sheet.
- Drizzle the potatoes with olive oil and season with salt and pepper. Toss them to coat evenly.
- Place the potatoes in the preheated oven and roast for about 30 minutes or until golden brown and crispy.
- While the potatoes are roasting, prepare the cod. Rinse the cod fillets under cold water and pat them dry with a paper towel.
- Season the cod fillets with salt and pepper on both sides.
