Ingredients
- 400g lomo de cerdo (pork loin)
- 400g papas (potatoes), peeled and cut into wedges
- 250ml vino tinto (red wine)
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh herbs (such as rosemary or thyme) for garnish
Instructions
- Preheat your oven to 200°C (400°F).
- In a large bowl, toss the potato wedges with olive oil, minced garlic, salt, and pepper. Spread them out on a baking tray in a single layer.
- Place the baking tray in the oven and roast the potatoes for about 25-30 minutes, or until they are golden and crispy, flipping them halfway through.
- While the potatoes are roasting, season the lomo de cerdo with salt and pepper. Heat a skillet over medium-high heat and add a splash of olive oil.
- Sear the pork loin for about 4-5 minutes on each side until nicely browned.
- Once seared, transfer the pork to the oven (on a separate tray or in a baking dish) and roast for an additional 15-20 minutes, or until the internal temperature reaches 65°C (150°F). Let it rest for a few minutes before slicing.
- In the same skillet used for the pork, pour in the red wine and scrape up any browned bits from the bottom. Let it simmer for about 5-7 minutes until slightly reduced and thickened.
- To serve, slice the lomo de cerdo and plate it alongside the crispy papas. Drizzle the red wine sauce over the top and garnish with fresh herbs.
