Low-Carb Air Fryer Black Bean Carrot Fritters

This recipe combines the earthiness of black beans, the sweetness of carrots, and a blend of dried herbs to create delightful low-carb fritters. These fritters are perfect for a light, yet satisfying meal for four people.

Ingredients

  • 1 can of black beans, drained and rinsed
  • 2 large carrots, grated
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Cooking spray for the air fryer

Instructions

  1. In a bowl, mash the black beans until they form a coarse paste.
  2. Add the grated carrots and dried herbs to the bowl and mix well to combine.
  3. Preheat the air fryer to 375°F (190°C).
  4. Form the bean and carrot mixture into small patties, ensuring they hold together well.
  5. Lightly spray the air fryer basket with cooking spray to prevent sticking.
  6. Place the fritters in the air fryer basket in a single layer, leaving some space between each one.
  7. Air fry the fritters for 10-12 minutes, flipping them halfway through, until they are golden brown and crispy.
