  • 4 large carrots
  • 1 cup of almonds
  • 1/2 cup of mayonnaise


  1. Preheat the oven to 425°F (220°C).
  2. Peel the carrots and cut them into thin strips to resemble fries.
  3. In a food processor, pulse the almonds until they are finely ground to create almond meal.
  4. Pour the almond meal onto a plate and set aside.
  5. Spread the mayonnaise on each carrot strip, ensuring they are evenly coated.
  6. Roll the mayonnaise-coated carrot strips in the almond meal until they are fully covered.
  7. Place the coated carrot fries on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 15-20 minutes, or until the almond crust is golden brown and crispy.
