  • 2 cups shelled edamame
  • 8 cups collard greens, chopped
  • 1 teaspoon sugar
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 clove garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame seeds (optional, for garnish)


  1. Chop those collard greens like you mean it, and mince that garlic. No half-arsing it!
  2. Put the shelled edamame in a microwave-safe bowl, add a splash of water, cover, and microwave for about 3 minutes until they're tender. Drain and set aside.
  3. Get a large skillet, heat the olive oil over medium-high heat. If you can't handle a bit of heat, get out of the kitchen!
  4. Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Don't you dare burn it!

  7. Add the microwaved edamame to the skillet. Stir in the soy sauce and cook for another 2 minutes until everything is well combined and heated through.
  8. Transfer to a serving dish, sprinkle with sesame seeds if you're feeling fancy, and serve immediately.
