Low-Carb Edamame and Collard Greens Stir Fry

A bloody fantastic low-carb recipe that's quick, easy, and perfect for a healthy meal. Get off your arse and give this a go, you won't regret it!
Ingredients
- 2 cups shelled edamame
- 8 cups collard greens, chopped
- 1 teaspoon sugar
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- 1 clove garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon sesame seeds (optional, for garnish)
Instructions
- Chop those collard greens like you mean it, and mince that garlic. No half-arsing it!
- Put the shelled edamame in a microwave-safe bowl, add a splash of water, cover, and microwave for about 3 minutes until they're tender. Drain and set aside.
- Get a large skillet, heat the olive oil over medium-high heat. If you can't handle a bit of heat, get out of the kitchen!
- Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Don't you dare burn it!
- Toss in the chopped collard greens. Cook, stirring frequently, until they start to wilt. Should take about 5 minutes. If it looks like a mess, you're doing it right!
- Sprinkle in the sugar, salt, and pepper. Stir well to combine. Cook for another 5 minutes until the greens are tender but still vibrant.
- Add the microwaved edamame to the skillet. Stir in the soy sauce and cook for another 2 minutes until everything is well combined and heated through.
- Transfer to a serving dish, sprinkle with sesame seeds if you're feeling fancy, and serve immediately.
