Low Carb Fennel and Whey Protein Soup

Whey Protein, Fennel bulb, broth or stock (chicken, vegetable), microwave
This is a no-nonsense, low-carb soup that's packed with flavor. Perfect for those who want to keep it light but still enjoy a hearty meal. Get your ingredients ready and let's get this done right!
Ingredients
- 2 scoops of Whey Protein
- 2 Fennel bulbs, thinly sliced
- 4 cups of chicken or vegetable broth/stock
- Salt and pepper to taste
Instructions
- Prep the Fennel: Slice those fennel bulbs thinly, and I mean thinly! We want them to cook evenly and quickly.
- Cook the Fennel: Place the thinly sliced fennel in a microwave-safe bowl. Add a splash of broth to keep it moist. Cover it with a microwave-safe lid or plastic wrap, leaving a small vent for steam.
- Microwave the Fennel: Microwave on high for about 5-7 minutes, or until the fennel is tender. Don't overdo it, we want tender, not mush!
- Blend the Soup: In a blender, combine the cooked fennel, the remaining broth, and the whey protein. Blend until smooth. If it's too thick, add more broth until you get the desired consistency.
