Low Carb Lentil and Fish Medley

What Started it all:
Lentils, Turnip, canned fish (tuna, sardines), microwave
This low-carb dish will knock your bloody socks off! Packed with protein and flavor, it’s perfect for a healthy meal that doesn’t skimp on taste. Let’s get to it, shall we?
Ingredients
- 2 cups Lentils
- 2 Turnips, diced
- 2 cans of fish (tuna or sardines), drained
- Salt and pepper to taste
- 2 tablespoons Olive oil
- 1 teaspoon Paprika
- 1 teaspoon Garlic powder
- Fresh parsley for garnish (optional)
Instructions
- Prep the Lentils: Rinse the lentils under cold water. Make sure they’re clean, for heaven’s sake!
- Cook the Lentils: In a microwave-safe bowl, add the lentils and enough water to cover them by about an inch. Microwave on high for 10-12 minutes until they’re tender. Drain any excess water.
- Prepare the Turnips: While the lentils are cooking, dice the turnips into small, bite-sized pieces. Season them with salt, pepper, paprika, and garlic powder. *[Gordon Ramsay would probably mutter something about not screwing this part up]*
- Cook the Turnips: Heat the olive oil in a large microwave-safe dish. Add the seasoned turnips and microwave on high for 8-10 minutes, stirring halfway through, until they’re soft and slightly golden.
- Combine Ingredients: In a large serving bowl, mix the cooked lentils and turnips. Flake the canned fish into the bowl and gently stir to combine.
- Season: Taste the mixture and add more salt and pepper if needed. Don’t be shy!
- Garnish and Serve: Sprinkle with fresh parsley if you have it. Serve immediately.
