Low Carb Seitan Pasta Skillet

Ingredients
- 400g seitan, sliced
- 2 large tomatoes, diced
- 200g low-carb pasta
- Olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the low-carb pasta according to the package instructions. Drain and set aside.
- In a skillet, heat a drizzle of olive oil over medium heat.
- Add the sliced seitan to the skillet and cook until golden brown, about 4-5 minutes.
- Add the diced tomatoes to the skillet and cook for an additional 2-3 minutes until they soften.
- Gently fold the cooked pasta into the skillet with the seitan and tomatoes, ensuring everything is well combined.
- Season with salt and pepper to taste.
- Serve the low-carb seitan pasta skillet in individual bowls, garnished with fresh basil leaves.
