Low Carb Tuna and Spinach Stew

What Started it all:
canned fish (tuna, sardines), Spinach, canned tomatoes, blender


  • 2 cans of tuna or sardines
  • 4 cups of fresh spinach
  • 1 can of diced tomatoes
  • 1 cup of water
  • Salt and pepper to taste


  1. In a blender, combine the canned tomatoes and water. Blend until smooth.
  2. In a large pot, heat the blended tomatoes over medium heat.
  3. Add the canned fish to the pot and stir gently to combine.
  4. Allow the mixture to simmer for 10 minutes, stirring occasionally.
  5. Add the fresh spinach to the pot and continue to simmer for an additional 5 minutes, or until the spinach is wilted.
  6. Season with salt and pepper to taste.
  7. Serve the stew hot and enjoy!
