Mackerel and Corn Salad

  • 4 mackerel fillets
  • 2 cups of corn kernels
  • 1/2 cup of diced onions
  • Salt and pepper to taste


  1. Place the mackerel fillets on a microwave-safe dish and season with salt and pepper.
  2. Cover the dish with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape.
  3. Microwave the mackerel fillets on high for 3-4 minutes, or until the fish is cooked through.
  4. In a separate microwave-safe bowl, combine the corn kernels and diced onions.
  5. Microwave the corn and onions on high for 3-4 minutes, or until the vegetables are tender.
  6. Flake the cooked mackerel into bite-sized pieces and combine with the cooked corn and onions in a large mixing bowl.
  7. Toss the salad gently to mix all the ingredients together.
  8. Adjust the seasoning with salt and pepper to taste.
  9. Serve the mackerel and corn salad immediately and enjoy!
