Marry me chicken and rice in a rice cooker

This delightful recipe combines the flavors of “marry me” chicken with the ease of cooking rice in a rice cooker. It’s a perfect dish for a family dinner or a special occasion.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long grain white rice
  • 1 1/2 cups chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken breasts and cook until golden brown on both sides, about 6-7 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the minced garlic and sun-dried tomatoes. Cook for 2-3 minutes.
  6. Add the rice to the skillet and stir to coat it with the oil and garlic.
  7. Transfer the rice mixture to the rice cooker and add the chicken broth. Place the browned chicken breasts on top.
  8. Cook the rice and chicken in the rice cooker according to the manufacturer's instructions.
  9. Once the rice cooker is done, remove the chicken and stir in the heavy cream, grated Parmesan cheese, and dried basil into the rice.
  10. Serve the chicken over the creamy rice, garnished with fresh parsley.
