Mediterranean Beef and Pumpkin Stew

This bold and flavorful Mediterranean beef and pumpkin stew is sure to warm you up and leave you satisfied. It’s the perfect dish to add a fiery kick to your dinner table!

Ingredients

  • 1.5 lbs stew beef, cut into cubes
  • 1 small pumpkin, peeled and diced
  • 1/4 cup apple cider vinegar
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste
  • Olive oil
  • 4 cups water or beef broth

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium-high heat.
  2. Season the stew beef cubes with salt and pepper.
  3. Sear the beef in the pot until browned on all sides, then remove and set aside.
  4. Add a bit more olive oil to the pot and sauté the diced pumpkin until it starts to caramelize.
  5. Deglaze the pot with the apple cider vinegar and balsamic vinegar, scraping up any browned bits from the bottom.
  6. Return the beef to the pot and add 4 cups of water or beef broth.
  7. Bring the stew to a boil, then reduce the heat to low and let it simmer for 1.5 to 2 hours, until the beef is tender and the pumpkin is soft.
  8. Season with additional salt and pepper to taste.
  9. Serve the Mediterranean beef and pumpkin stew hot, garnished with a drizzle of olive oil and a sprinkle of fresh herbs if desired.
