Mediterranean Beef and Squash Stew

Ingredients

  • 1 pound stew beef
  • 2 cups squash, diced
  • 4 cloves garlic
  • Olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Start by seasoning the stew beef with salt and pepper.
  2. In a large pot, heat some olive oil over medium-high heat.
  3. Add the seasoned stew beef to the pot and brown it on all sides.
  4. Once the beef is browned, remove it from the pot and set it aside.
  5. In the same pot, add the diced squash and minced garlic. Cook for a few minutes until the squash starts to soften.
  6. Return the beef to the pot and add enough water to cover the ingredients.
  7. Bring the stew to a boil, then reduce the heat and let it simmer for about 1-2 hours, or until the beef is tender.
  8. Once the stew is ready, adjust the seasoning with salt and pepper if needed.
  9. Serve the Mediterranean beef and squash stew hot, garnished with fresh parsley.
