Mediterranean Beef and Squash Stew

Stew Beef, Squash, garlic, food processor

Ingredients
- 1 pound stew beef
- 2 cups squash, diced
- 4 cloves garlic
- Olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Start by seasoning the stew beef with salt and pepper.
- In a large pot, heat some olive oil over medium-high heat.
- Add the seasoned stew beef to the pot and brown it on all sides.
- Once the beef is browned, remove it from the pot and set it aside.
- In the same pot, add the diced squash and minced garlic. Cook for a few minutes until the squash starts to soften.
- Return the beef to the pot and add enough water to cover the ingredients.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 1-2 hours, or until the beef is tender.
- Once the stew is ready, adjust the seasoning with salt and pepper if needed.
- Serve the Mediterranean beef and squash stew hot, garnished with fresh parsley.
