Mediterranean Bison and Kale Salad

  • 1 lb bison steak, thinly sliced
  • 4 cups kale, chopped
  • 3 tbsp olive oil
  • Salt and pepper to taste


  1. Place the bison steak in a microwave-safe dish and season with salt and pepper.
  2. Drizzle 1 tablespoon of olive oil over the bison and microwave on high for 3-4 minutes, or until the bison is cooked to your preference.
  3. In a separate bowl, massage the chopped kale with the remaining olive oil for 1-2 minutes to soften the leaves.
  4. Arrange the cooked bison on top of the kale.
  5. Season with additional salt and pepper if desired.
  6. Serve and enjoy!
