Mediterranean Brisket with Celery-Mustard Sauce

Ingredients
- 1.5 kg brisket
- 4 stalks of celery, finely chopped
- 3 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 160°C (320°F). Season the brisket generously with salt and pepper on both sides.
- Heat the olive oil in a large, ovenproof pot over medium-high heat. Add the brisket and sear for 4-5 minutes on each side until browned. Remove the brisket and set aside.
- In the same pot, add the chopped onion and garlic. Sauté until they are soft and fragrant, about 3-4 minutes. Add the chopped celery and continue to cook for another 5 minutes.
- Transfer the sautéed vegetables to a blender. Add the Dijon mustard and beef broth to the blender. Blend until smooth and well combined.
- Return the brisket to the pot and pour the celery-mustard sauce over it. Cover the pot with a lid and transfer it to the preheated oven. Cook for 3-4 hours, or until the brisket is tender and easily pulls apart with a fork.
- Remove the brisket from the oven and let it rest for 10 minutes before slicing. Serve the sliced brisket with the celery-mustard sauce poured over the top. Garnish with fresh parsley.
