Mediterranean Chicken and Mushroom Rice

Chicken Breast, Mushroom, rice, frying pan

Ingredients
- 4 chicken breasts
- 2 cups of sliced mushrooms
- 2 cups of rice
- Olive oil
- Salt
- Pepper
- Fresh herbs (such as thyme or rosemary)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat a drizzle of olive oil in a frying pan over medium-high heat.
- Sear the chicken breasts for 4-5 minutes on each side until golden brown and cooked through.
- Remove the chicken from the pan and set it aside.
- In the same pan, add a bit more olive oil if needed and sauté the sliced mushrooms until they are tender and golden.
- Meanwhile, cook the rice according to the package instructions.
- Once the mushrooms are cooked, add the cooked rice to the pan and stir to combine.
- Season the rice and mushrooms with salt, pepper, and fresh herbs for extra flavor.
- Serve the Mediterranean chicken breasts on a bed of the mushroom rice.
