Mediterranean Chicken and Mushroom Rice

What Started it all:
Chicken Breast, Mushroom, rice, frying pan


  • 4 chicken breasts
  • 2 cups of sliced mushrooms
  • 2 cups of rice
  • Olive oil
  • Salt
  • Pepper
  • Fresh herbs (such as thyme or rosemary)


  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat a drizzle of olive oil in a frying pan over medium-high heat.
  3. Sear the chicken breasts for 4-5 minutes on each side until golden brown and cooked through.
  4. Remove the chicken from the pan and set it aside.
  5. In the same pan, add a bit more olive oil if needed and sauté the sliced mushrooms until they are tender and golden.
  6. Meanwhile, cook the rice according to the package instructions.
  7. Once the mushrooms are cooked, add the cooked rice to the pan and stir to combine.
  8. Season the rice and mushrooms with salt, pepper, and fresh herbs for extra flavor.
  9. Serve the Mediterranean chicken breasts on a bed of the mushroom rice.
