Mediterranean Chicken and Vegetable Bake

Ingredients

  • 4 chicken breasts
  • 4 medium potatoes
  • 4 medium carrots
  • 2 red peppers
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and cut the potatoes and carrots into bite-sized pieces.
  3. Cut the red peppers into strips.
  4. Arrange the chicken breasts, potatoes, carrots, and red peppers in a large baking dish.
  5. Drizzle with olive oil and sprinkle with dried oregano, thyme, garlic powder, salt, and pepper.
  6. Toss everything together to coat.
  7. Cover the dish with foil and bake for 40 minutes.
  8. Remove the foil and bake for an additional 20-25 minutes, until the chicken is cooked through and the vegetables are tender.
  9. Serve hot and enjoy your delicious Mediterranean chicken and vegetable bake!
