Mediterranean Chicken and Vegetable Bake
What Started it all:
Chicken breast, potatoes, carrots, peppers
Ingredients
- 4 chicken breasts
- 4 medium potatoes
- 4 medium carrots
- 2 red peppers
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp garlic powder
- salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Peel and cut the potatoes and carrots into bite-sized pieces.
- Cut the red peppers into strips.
- Arrange the chicken breasts, potatoes, carrots, and red peppers in a large baking dish.
- Drizzle with olive oil and sprinkle with dried oregano, thyme, garlic powder, salt, and pepper.
- Toss everything together to coat.
- Cover the dish with foil and bake for 40 minutes.
- Remove the foil and bake for an additional 20-25 minutes, until the chicken is cooked through and the vegetables are tender.
