- 1 chicken thigh, boneless and skinless
- 1 small bok choy, chopped
- 1 small carrot, julienned
- 1/4 onion, thinly sliced
- 75g hokkien noodles
- 1 small potato, diced
- 1/4 cup frozen peas
- 1/4 cup frozen corn kernels
- 1/2 cup canned tomatoes, diced
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- 1 teaspoon soy sauce
- 1 teaspoon teriyaki sauce
- 1 tablespoon pine nuts
- 1 teaspoon sesame seeds
- 1/4 cup milk
- 2 tablespoons orange juice
- 1 teaspoon sugar (optional)
- Salt and pepper, to taste
- Optional: 1/4 cup broccoli florets
Instructions
- Prepare the Chicken: Season the chicken thigh with salt, pepper, and a splash of soy sauce. Heat olive oil in a skillet over medium heat and cook the chicken for about 6-7 minutes on each side, until golden brown and cooked through. Remove and set aside.
- Sauté the Vegetables: In the same skillet, add the onion, carrot, and any optional broccoli florets. Sauté for 3-4 minutes until they begin to soften. Add the bok choy, frozen peas, and corn, cooking for another 2-3 minutes until the bok choy wilts.
- Cook the Noodles: While the vegetables are cooking, prepare the hokkien noodles according to package instructions. Drain and set aside.
- Combine Ingredients: Add the diced canned tomatoes, balsamic vinegar, teriyaki sauce, and orange juice to the skillet. Stir well and let simmer for 2-3 minutes. If desired, add sugar to balance the acidity.
- Finish the Dish: Slice the cooked chicken and add it back to the skillet along with the cooked hokkien noodles. Toss everything together, allowing the flavors to meld for another minute.
