Mediterranean Chicken with Sweet Potato and Nut Crust

What Started it all:
Chicken breast, Sweet potato, nuts (almonds, walnuts), stove


  • 4 chicken breasts
  • 2 large sweet potatoes
  • 1/2 cup almonds
  • 1/2 cup walnuts
  • Olive oil
  • Salt and pepper


  1. Preheat the stove to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Peel and cut the sweet potatoes into cubes.
  4. In a food processor, pulse the almonds and walnuts until they are finely chopped.
  5. Mix the chopped nuts together on a plate.
  6. Dip each chicken breast into the nut mixture, pressing gently to coat both sides.
  7. Heat olive oil in a large ovenproof skillet over medium-high heat.
  8. Add the chicken breasts to the skillet and cook until golden brown, about 3 minutes per side.
  9. Remove the skillet from the stove and transfer it to the preheated oven.
  10. Roast the chicken and sweet potatoes for about 20 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  11. Serve the Mediterranean chicken with roasted sweet potatoes and enjoy!
