Mediterranean Couscous Bowl with Halloumi and Tzatziki

Ingredients
- 1 cup couscous
- 2 cups water or vegetable broth
- 8 oz halloumi cheese, sliced
- 1 medium red onion, thinly sliced
- 4 large eggs
- 4 pitta breads
- 1 cucumber, diced
- 1 cup hummus
- 1 cup tzatziki sauce
- Olive oil
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Prepare the Couscous: In a medium saucepan, bring the water or vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes, then fluff with a fork.
- Cook the Halloumi: In a non-stick skillet, heat a drizzle of olive oil over medium heat. Add the sliced halloumi and cook for about 2-3 minutes on each side, until golden and crispy. Remove from skillet and set aside.
- Sauté the Red Onion: In the same skillet, add a bit more olive oil if necessary. Add the sliced red onion and sauté for about 5 minutes, until softened and slightly caramelized. Season with salt and pepper.
- Boil the Eggs: Bring a small pot of water to a boil. Carefully add the eggs and boil for about 6-7 minutes for soft-boiled or 9-10 minutes for hard-boiled. Once done, transfer them to an ice bath for a few minutes, then peel.
- Warm the Pita Bread: While the eggs are cooling, warm the pita bread in a dry skillet or wrap in foil and place in a warm oven for about 5 minutes.
- Assemble the Bowls: In each serving bowl, place a generous scoop of hummus at the base. Add a portion of couscous, sautéed red onion, crispy halloumi, diced cucumber, and a few dollops of tzatziki.
- Add the Eggs: Slice the boiled eggs in half and place them on top of the bowls. Drizzle with olive oil and sprinkle with fresh herbs if desired.
- Serve: Serve the Mediterranean Couscous Bowls with warm pita bread on the side for dipping.
