Mediterranean Honey and Hemp Seed Potato Gratin

This dish is a celebration of Mediterranean flavors, combining the creamy richness of potato with the nutty sweetness of hemp seeds and the warmth of honey.


  • 4 large potatoes, thinly sliced
  • 1/4 cup hemp seeds
  • 2 tbsp honey
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)


  1. Preheat the oven to 375°F (190°C).
  2. In a food processor, blend the hemp seeds until they form a fine crumb.
  3. In a large bowl, combine the sliced potatoes, hemp seed crumb, honey, olive oil, salt, and pepper. Toss until the potatoes are well coated.
  4. Transfer the potato mixture to a 9x13 inch baking dish and spread it out evenly.
  5. Bake for 45-50 minutes, or until the potatoes are tender and golden brown.
  6. Remove from the oven and sprinkle with chopped parsley, if desired.
  7. Serve warm, garnished with additional parsley if desired.
