Mediterranean Instant Pot Short Ribs

Ingredients
- 2 lbs short ribs
- 2 large carrots, chopped
- 4 medium potatoes, diced
- 1 cup beef broth
- 1/2 cup red wine
- 1/4 cup balsamic vinegar
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 tsp dried oregano
- 2 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Season the short ribs with salt, pepper, oregano, and thyme.
- Turn on the Instant Pot and select the 'Sauté' function. Add olive oil and brown the short ribs on all sides. Remove and set aside.
- Add the chopped onions and garlic to the Instant Pot and sauté until softened.
- Deglaze the pot with red wine, scraping up any browned bits from the bottom.
- Return the browned short ribs to the pot. Add the chopped carrots, diced potatoes, beef broth, and balsamic vinegar.
- Close the Instant Pot and set the valve to the sealing position. Cook on high pressure for 45 minutes.
- Once the cooking time is complete, allow the pressure to naturally release for 10 minutes, then carefully release any remaining pressure.
- Remove the short ribs and vegetables from the pot and set aside.
- Select the 'Sauté' function again and reduce the cooking liquid to create a flavorful sauce.
- Serve the short ribs and vegetables with the reduced sauce, garnished with fresh parsley.
