  • 2 lbs short ribs
  • 2 large carrots, chopped
  • 4 medium potatoes, diced
  • 1 cup beef broth
  • 1/2 cup red wine
  • 1/4 cup balsamic vinegar
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish


  1. Season the short ribs with salt, pepper, oregano, and thyme.
  2. Turn on the Instant Pot and select the 'Sauté' function. Add olive oil and brown the short ribs on all sides. Remove and set aside.
  3. Add the chopped onions and garlic to the Instant Pot and sauté until softened.
  4. Deglaze the pot with red wine, scraping up any browned bits from the bottom.
  5. Return the browned short ribs to the pot. Add the chopped carrots, diced potatoes, beef broth, and balsamic vinegar.
  6. Close the Instant Pot and set the valve to the sealing position. Cook on high pressure for 45 minutes.
  7. Once the cooking time is complete, allow the pressure to naturally release for 10 minutes, then carefully release any remaining pressure.
  8. Remove the short ribs and vegetables from the pot and set aside.
  9. Select the 'Sauté' function again and reduce the cooking liquid to create a flavorful sauce.
  10. Serve the short ribs and vegetables with the reduced sauce, garnished with fresh parsley.
