Mediterranean Mashup
What Started it all:
Black Beans, Pumpkin, coffee, microwave
A Mediterranean dish with a twist, featuring black beans, pumpkin, and a delicious blend of flavors.
Ingredients
- 1 cup black beans, cooked and mashed
- 1 small pumpkin, peeled and diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup strong brewed coffee
- 1 tablespoon honey
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the mashed black beans, diced pumpkin, olive oil, garlic, cumin, smoked paprika, salt, and black pepper.
- In a small bowl, whisk together the brewed coffee and honey until well combined.
- Add the coffee-honey mixture to the bean-pumpkin mixture and stir until well combined.
- Transfer the mixture to a 9x13 inch baking dish and smooth the top.
- Sprinkle the chopped parsley and crumbled feta cheese (if using) on top of the mixture.
- Bake for 25-30 minutes or until the top is golden brown and the mixture is heated through.
- Remove from the oven and let it cool for a few minutes before serving.
