Black Beans, Pumpkin, coffee, microwave

A Mediterranean dish with a twist, featuring black beans, pumpkin, and a delicious blend of flavors.


  • 1 cup black beans, cooked and mashed
  • 1 small pumpkin, peeled and diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup strong brewed coffee
  • 1 tablespoon honey
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese (optional)


  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the mashed black beans, diced pumpkin, olive oil, garlic, cumin, smoked paprika, salt, and black pepper.
  3. In a small bowl, whisk together the brewed coffee and honey until well combined.
  4. Add the coffee-honey mixture to the bean-pumpkin mixture and stir until well combined.
  5. Transfer the mixture to a 9x13 inch baking dish and smooth the top.
  6. Sprinkle the chopped parsley and crumbled feta cheese (if using) on top of the mixture.
  7. Bake for 25-30 minutes or until the top is golden brown and the mixture is heated through.
  8. Remove from the oven and let it cool for a few minutes before serving.
