Mediterranean Pork Chops with Broccoli and Rice

A delightful and comforting Mediterranean-inspired dish that brings together the succulent flavors of pork chops, the vibrant green of broccoli, and the fluffy texture of rice. Perfect for a cozy dinner, this recipe makes use of a pressure cooker to ensure everything is cooked to perfection and in a timely fashion.


  • 4 pork chops
  • 2 cups of broccoli florets
  • 1 cup of rice
  • 2 cups of chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh lemon wedges (optional, for serving)


  1. Prepare the Pork Chops: Season the pork chops with salt, pepper, garlic powder, and dried oregano on both sides. Heat the olive oil in the pressure cooker on the sauté setting.
  2. Sear the Pork Chops: Once the oil is hot, add the pork chops to the pressure cooker. Sear the pork chops for about 2-3 minutes on each side until they are golden brown. Remove the pork chops and set them aside.
  3. Cook the Rice: Add the rice to the pressure cooker, stirring it in the remaining oil and pork juices. Pour in the chicken broth and stir to combine.
  4. Add Broccoli and Pork Chops: Place the broccoli florets on top of the rice. Nestle the seared pork chops on top of the broccoli.
  5. Pressure Cook: Secure the lid on the pressure cooker and set it to cook on high pressure for 10 minutes. Once the cooking time is complete, use the natural release method for 5 minutes, then quick release any remaining pressure.
  6. Serve: Carefully open the pressure cooker and remove the pork chops. Fluff the rice with a fork, mixing in the broccoli. Serve each pork chop on a bed of the broccoli rice mixture. Garnish with fresh lemon wedges if desired.
