Ingredients
- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced (any color)
- 1/4 red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water in a fine mesh sieve to remove any bitterness.
- In a medium saucepan, combine the rinsed quinoa and water (or vegetable broth). Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the quinoa with a fork and let it cool to room temperature.
- In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, olives, feta cheese, and parsley.
- Add the cooled quinoa to the vegetable mixture and gently toss to combine.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss again to coat everything evenly.
- Taste and adjust seasoning if necessary, then serve immediately or refrigerate for 30 minutes to let the flavors meld.
