Ingredients

  • 1.5 kg roast (chicken, lamb, or beef)
  • 200g spinach
  • 250g dried lentils
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 lemon, juiced
  • 500ml vegetable or chicken stock
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (rosemary, thyme, oregano) for seasoning

Instructions

  1. Season the roast with salt, pepper, and your choice of Mediterranean herbs.
  2. Heat 1 tablespoon of olive oil in a pan over medium-high heat. Sear the roast on all sides until golden brown.
  3. Place the roast in the slow cooker.
  4. In the same pan, add the remaining olive oil and sauté the chopped onion and minced garlic until soft and fragrant.
  5. Add the dried lentils to the pan and stir to coat them in the oil, onion, and garlic mixture.
  6. Transfer the lentil mixture to the slow cooker, around the roast.
  7. Pour in the vegetable or chicken stock and the juice of one lemon.
  8. Cook on low for 6-8 hours, or until the roast is tender and the lentils are cooked through.
  9. In the last 30 minutes of cooking, add the fresh spinach to the slow cooker, allowing it to wilt into the dish.
  10. Once the roast is cooked, remove it from the slow cooker and let it rest before slicing.
  11. Serve the sliced roast with the lentils, spinach, and a drizzle of the cooking juices.
