Mediterranean Roast with Spinach and Lentils

Ingredients
- 1.5 kg roast (chicken, lamb, or beef)
- 200g spinach
- 250g dried lentils
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 lemon, juiced
- 500ml vegetable or chicken stock
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (rosemary, thyme, oregano) for seasoning
Instructions
- Season the roast with salt, pepper, and your choice of Mediterranean herbs.
- Heat 1 tablespoon of olive oil in a pan over medium-high heat. Sear the roast on all sides until golden brown.
- Place the roast in the slow cooker.
- In the same pan, add the remaining olive oil and sauté the chopped onion and minced garlic until soft and fragrant.
- Add the dried lentils to the pan and stir to coat them in the oil, onion, and garlic mixture.
- Transfer the lentil mixture to the slow cooker, around the roast.
- Pour in the vegetable or chicken stock and the juice of one lemon.
- Cook on low for 6-8 hours, or until the roast is tender and the lentils are cooked through.
- In the last 30 minutes of cooking, add the fresh spinach to the slow cooker, allowing it to wilt into the dish.
- Once the roast is cooked, remove it from the slow cooker and let it rest before slicing.
- Serve the sliced roast with the lentils, spinach, and a drizzle of the cooking juices.
