Mediterranean Shrimp and Asparagus Rice

This recipe is a delightful Mediterranean dish that combines succulent shrimp, fresh asparagus, and fluffy rice to create a comforting meal for four.
Ingredients
- 1 pound of shrimp, peeled and deveined
- 1 bunch of fresh asparagus, trimmed and cut into 2-inch pieces
- 2 cups of rice
- Olive oil
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the rice according to the package instructions, then set it aside.
- In a large bowl, toss the shrimp and asparagus with olive oil, salt, and pepper.
- Spread the shrimp and asparagus in a single layer on a baking sheet and roast in the preheated oven for 8-10 minutes, or until the shrimp are pink and opaque.
- In a large skillet, heat a bit of olive oil over medium heat and add the cooked rice, stirring to warm it through.
