Mediterranean Slow Cooker Shredded Chicken with Collard Greens

  • 2 lbs shredded chicken
  • 1 bunch collard greens, chopped
  • 1 tsp baking powder


  1. Season the shredded chicken with your favorite Mediterranean spices, such as oregano, thyme, and a pinch of cumin.
  2. Place the seasoned chicken in the slow cooker and add the chopped collard greens on top.
  3. In a small bowl, mix the baking powder with a bit of water to create a slurry, then pour it over the chicken and collard greens. This will help keep the collard greens vibrant and tender during the slow cooking process.
  4. Set the slow cooker to low and let the ingredients cook for 4-6 hours, or until the chicken is tender and the collard greens are cooked to your liking.
  5. Once done, shred the chicken using two forks and mix it with the collard greens to evenly distribute the flavors.
