This quick and easy Mediterranean-inspired stir-fry is perfect for a weeknight dinner. Using a pressure cooker to speed things up, you can have a delicious meal ready in no time.


  • 1 lb stir-fry beef strips
  • 4 cups bok choy, chopped
  • 1 cup brewed tea (preferably green tea)
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • Salt and pepper to taste


  1. Prep the Ingredients: Chop the bok choy and set it aside. Brew your tea and let it cool slightly.
  2. Sauté the Aromatics: Set your pressure cooker to the sauté function. Add olive oil and let it heat up. Add the chopped onion and minced garlic, sautéing until they become fragrant and translucent.
  3. Add the Beef: Add the stir-fry beef strips to the pressure cooker. Season with salt, pepper, oregano, and cumin. Stir to combine and let the beef brown on all sides.
  4. Deglaze with Tea: Pour in the brewed tea to deglaze the pot, scraping up any browned bits from the bottom.
  5. Pressure Cook: Secure the lid on your pressure cooker and set it to high pressure for 10 minutes.
  6. Quick Release and Add Bok Choy: Once the cooking time is up, perform a quick release to let out the steam. Open the lid and add the chopped bok choy. Stir to combine and let it cook in the residual heat for a few minutes until the bok choy is tender.
  7. Finish with Soy Sauce: Stir in the soy sauce, give everything one last mix, and adjust the seasoning if needed.
