Mediterranean Tuna with Tomato and Lentils

Ingredients

  • 4 tuna steaks
  • 4 tomatoes, chopped
  • 1 cup of lentils
  • Olive oil
  • Salt
  • Pepper
  • Fresh parsley, chopped
  • Lemon wedges

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the lentils and cook them according to the package instructions. Drain and set aside.
  3. Season the tuna steaks with salt and pepper on both sides.
  4. Heat a drizzle of olive oil in a pan over high heat.
  5. Sear the tuna steaks for 1-2 minutes on each side until golden brown but still pink in the middle.
  6. Transfer the seared tuna steaks to a baking dish.
  7. In the same pan, add a bit more olive oil and sauté the chopped tomatoes for 3-4 minutes until they start to soften.
  8. Spread the cooked lentils around the tuna steaks in the baking dish.
  9. Spoon the sautéed tomatoes over the tuna and lentils.
  10. Drizzle a little more olive oil over the top and season with salt and pepper.
  11. Place the baking dish in the preheated oven and bake for 8-10 minutes, or until the tuna is cooked to your liking.
  12. Once done, remove the dish from the oven and sprinkle with chopped fresh parsley.
  13. Serve the Mediterranean tuna with lemon wedges on the side.
