Mediterranean Tuna with Tomato and Lentils

Ingredients
- 4 tuna steaks
- 4 tomatoes, chopped
- 1 cup of lentils
- Olive oil
- Salt
- Pepper
- Fresh parsley, chopped
- Lemon wedges
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the lentils and cook them according to the package instructions. Drain and set aside.
- Season the tuna steaks with salt and pepper on both sides.
- Heat a drizzle of olive oil in a pan over high heat.
- Sear the tuna steaks for 1-2 minutes on each side until golden brown but still pink in the middle.
- Transfer the seared tuna steaks to a baking dish.
- In the same pan, add a bit more olive oil and sauté the chopped tomatoes for 3-4 minutes until they start to soften.
- Spread the cooked lentils around the tuna steaks in the baking dish.
- Spoon the sautéed tomatoes over the tuna and lentils.
- Drizzle a little more olive oil over the top and season with salt and pepper.
- Place the baking dish in the preheated oven and bake for 8-10 minutes, or until the tuna is cooked to your liking.
- Once done, remove the dish from the oven and sprinkle with chopped fresh parsley.
- Serve the Mediterranean tuna with lemon wedges on the side.
