Mediterranean Turkey and Shrimp Quinoa Bowl

This Mediterranean-inspired quinoa bowl is a delightful medley of flavors and textures, combining ground turkey, shrimp, and fresh vegetables. It's a healthy, protein-packed meal that's perfect for any time of the day.
Ingredients
- 100g ground turkey
- 100g shrimp, peeled and deveined
- 1 small zucchini, diced
- 1 small tomato, diced
- 1/2 cup broccoli florets
- 1/4 cup quinoa
- 1 clove garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Juice of 1/2 lemon
- Fresh parsley for garnish (optional)
Instructions
- Rinse the quinoa thoroughly. In a small saucepan, bring 1/2 cup of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed and the quinoa is fluffy. Set aside.
- While the quinoa is cooking, heat 1/2 tablespoon of olive oil in a large skillet over medium heat. Add the diced zucchini and broccoli florets. Sauté for about 5 minutes until they start to soften. Add the diced tomato and cook for another 2-3 minutes. Season with salt and pepper to taste. Remove vegetables from the skillet and set aside.
- In the same skillet, add the remaining 1/2 tablespoon of olive oil. Add the ground turkey and minced garlic. Cook, breaking up the turkey with a spoon, until it is no longer pink and fully cooked through, about 5-7 minutes. Season with salt and pepper to taste.
- Add the shrimp to the skillet with the cooked turkey. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque.
- Add the cooked quinoa and sautéed vegetables back into the skillet with the turkey and shrimp. Stir to combine and heat through. Squeeze the juice of half a lemon over the mixture and stir again.
