Mediterranean Turkey and Turnip Stew

This hearty and flavorful stew combines tender turkey, earthy turnips, and a touch of coffee for a unique Mediterranean twist. Prepared in a pressure cooker, this recipe is perfect for a satisfying meal for four.
Ingredients
- 1 lb turkey breast, cubed
- 2 turnips, peeled and diced
- 1 cup strong coffee
- Salt and pepper to taste
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 2 cups chicken broth
- Fresh parsley for garnish
Instructions
- Season the turkey cubes with salt and pepper.
- Heat some olive oil in the pressure cooker and brown the turkey cubes in batches. Remove and set aside.
- In the same pressure cooker, sauté the onions and garlic until softened.
- Add the diced turnips and cook for a few minutes.
- Stir in the tomatoes, oregano, and paprika.
- Pour in the strong coffee and deglaze the bottom of the pressure cooker.
- Return the browned turkey to the pressure cooker.
- Pour in the chicken broth and stir to combine.
- Secure the lid on the pressure cooker and cook on high pressure for 15 minutes.
- Once done, release the pressure and carefully open the lid.
- Adjust the seasoning if needed and serve the stew hot, garnished with fresh parsley.
