This hearty and flavorful stew combines tender turkey, earthy turnips, and a touch of coffee for a unique Mediterranean twist. Prepared in a pressure cooker, this recipe is perfect for a satisfying meal for four.

Ingredients

  • 1 lb turkey breast, cubed
  • 2 turnips, peeled and diced
  • 1 cup strong coffee
  • Salt and pepper to taste
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 2 cups chicken broth
  • Fresh parsley for garnish

Instructions

  1. Season the turkey cubes with salt and pepper.
  2. Heat some olive oil in the pressure cooker and brown the turkey cubes in batches. Remove and set aside.
  3. In the same pressure cooker, sauté the onions and garlic until softened.
  4. Add the diced turnips and cook for a few minutes.
  5. Stir in the tomatoes, oregano, and paprika.
  6. Pour in the strong coffee and deglaze the bottom of the pressure cooker.
  7. Return the browned turkey to the pressure cooker.
  8. Pour in the chicken broth and stir to combine.
  9. Secure the lid on the pressure cooker and cook on high pressure for 15 minutes.
  10. Once done, release the pressure and carefully open the lid.
  11. Adjust the seasoning if needed and serve the stew hot, garnished with fresh parsley.
