This hearty Mexican stew is perfect for a family meal. Packed with the goodness of almonds and walnuts, it's a nutritious dish that brings everyone together around the dinner table.


  • 2 cups almonds
  • 4 large tomatoes, chopped
  • 1 cup walnuts
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish


  1. 1. Prep the Ingredients: Chop the tomatoes and onion, mince the garlic. Toast the almonds and walnuts in a dry skillet over medium heat until golden brown, about 5 minutes. Set aside.
  2. 2. Sauté the Aromatics: Set your Instant Pot to the sauté function. Add olive oil, then add the chopped onion and minced garlic. Sauté until softened and fragrant, about 5 minutes.
  3. 3. Add the Tomatoes and Spices: Add the chopped tomatoes to the Instant Pot along with cumin, paprika, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
  4. 4. Combine and Cook: Add the toasted almonds and walnuts to the Instant Pot. Pour in the vegetable broth and stir to combine all ingredients. Seal the Instant Pot and set it to high pressure for 10 minutes.
  5. 5. Release and Garnish: Once the cooking time is up, carefully release the pressure according to the manufacturer’s instructions. Open the lid and give the stew a good stir. Taste and adjust seasoning if necessary.
