This recipe is a delightful fusion of Mexican flavors and comfort cooking. The tender stir-fried beef, earthy beets, and fluffy rice come together to create a satisfying and fresh meal for four.

Ingredients

  • 1 pound stir-fry beef
  • 2 medium beets, peeled and sliced
  • 2 cups rice
  • Freshly ground black pepper
  • Sea salt
  • Olive oil
  • 1 lime, juiced
  • 1 bunch fresh cilantro
  • 1 jalapeño, seeded and chopped
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika

Instructions

  1. Cook the rice according to package instructions and keep warm.
  2. In a blender, combine the lime juice, cilantro, jalapeño, garlic, cumin, paprika, a pinch of salt, and a generous grind of black pepper. Blend until smooth to create a zesty marinade.
  3. Place the stir-fry beef in a bowl and pour the marinade over it. Toss to coat the beef evenly and let it marinate for 15-20 minutes.
  4. Heat a drizzle of olive oil in a large skillet over medium-high heat. Add the marinated beef and stir-fry for 3-4 minutes, or until cooked to your liking. Remove the beef from the skillet and set aside.
  5. In the same skillet, add a bit more olive oil if needed, then add the sliced beets. Stir-fry for 5-6 minutes, or until the beets are tender and slightly caramelized.
  6. Serve the Mexican beef and beet stir-fry over the warm rice and garnish with additional fresh cilantro, if desired.
