Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups long-grain rice
- 4 cups chicken broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 can (14 oz) diced tomatoes with green chilies
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- Salt and pepper to taste

Instructions
- Season the chicken breasts with salt, pepper, cumin, chili powder, and paprika. Set aside.
- In a large skillet or pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
- Push the vegetables to the side and add the seasoned chicken breasts to the skillet. Brown the chicken on both sides, about 4-5 minutes per side.
- Once the chicken is browned, stir in the rice, diced tomatoes (with their juices), and chicken broth. Bring the mixture to a boil.
- Reduce the heat to low, cover the skillet, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid. Make sure to check occasionally to prevent sticking.
- Ensure the chicken is cooked through (internal temperature should reach 165°F or 75°C). If needed, you can remove the chicken, shred it, and then return it to the pot.
- Once the rice is cooked, fluff it with a fork. Garnish with fresh cilantro and serve with lime wedges on the side.
