Mexican Lamb and Green Bean Skillet

  • 500g lamb, diced
  • 200g green beans, trimmed
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh coriander for garnish


  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the diced lamb to the skillet and cook until browned on all sides.
  3. Once the lamb is browned, add the sliced onions to the skillet and cook until they are soft and translucent.
  4. Sprinkle cumin and paprika over the lamb and onions, and stir to coat the meat and onions with the spices.
  5. Add the green beans to the skillet and cook for a few minutes until they are tender-crisp.
  6. Season with salt and pepper to taste, and give everything a good stir to combine.
  7. Remove the skillet from the heat and garnish with fresh coriander before serving.
