Mexican Lentil and Collard Green Rice Bowl

Ingredients
- 8 eggs
- 1 bunch of collard greens, chopped
- 2 cups of lentils
- 2 cups of rice
- Water
- Salt and pepper to taste
- Optional toppings: salsa, avocado, lime wedges
Instructions
- Rinse the lentils and place them in a rice cooker.
- Add 4 cups of water to the rice cooker, close the lid, and set it to cook.
- Once the lentils are halfway cooked, add the rice to the rice cooker and let them cook together.
- While the lentils and rice are cooking, heat a large skillet over medium heat.
- Add the chopped collard greens to the skillet and sauté until they are tender.
- Season the collard greens with salt and pepper to taste.
- In another skillet, fry the eggs to your desired doneness.
- Once the lentils and rice are cooked, fluff the rice and lentil mixture with a fork.
- To assemble the bowls, divide the lentil and rice mixture among 4 bowls.
- Top each bowl with the sautéed collard greens and a fried egg.
- Serve with optional toppings such as salsa, avocado, and lime wedges.
