Mexican Lentil and Collard Green Rice Bowl

Ingredients

  • 8 eggs
  • 1 bunch of collard greens, chopped
  • 2 cups of lentils
  • 2 cups of rice
  • Water
  • Salt and pepper to taste
  • Optional toppings: salsa, avocado, lime wedges

Instructions

  1. Rinse the lentils and place them in a rice cooker.
  2. Add 4 cups of water to the rice cooker, close the lid, and set it to cook.
  3. Once the lentils are halfway cooked, add the rice to the rice cooker and let them cook together.
  4. While the lentils and rice are cooking, heat a large skillet over medium heat.
  5. Add the chopped collard greens to the skillet and sauté until they are tender.
  6. Season the collard greens with salt and pepper to taste.
  7. In another skillet, fry the eggs to your desired doneness.
  8. Once the lentils and rice are cooked, fluff the rice and lentil mixture with a fork.
  9. To assemble the bowls, divide the lentil and rice mixture among 4 bowls.
  10. Top each bowl with the sautéed collard greens and a fried egg.
  11. Serve with optional toppings such as salsa, avocado, and lime wedges.
