Mexican Quinoa Stuffed Leeks with Air-Fried Vegetables

  • 1 cup quinoa
  • 4 leeks
  • 1 can of mixed vegetables
  • Cooking spray for the air fryer


  1. 1. Preheat the air fryer to 375°F (190°C).
  2. 2. Rinse the quinoa under cold water and cook according to package instructions.
  3. 3. Trim the roots and dark green tops from the leeks, leaving the white and light green parts. Cut each leek in half lengthwise and wash thoroughly.
