- 2 cups long-grain rice
- 4 cups vegetable broth (or chicken broth)

- 1 teaspoon chili powder

Instructions
- Rinse the rice under cold water until the water runs clear. Drain and set aside.
- In a large skillet or saucepan, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
- Stir in the diced tomato, ground cumin, and chili powder. Cook for an additional 2-3 minutes, allowing the flavors to meld.
- Add the rinsed rice to the skillet, stirring to coat the rice with the oil and spices. Toast the rice for about 2-3 minutes, stirring constantly.
- Pour in the vegetable broth and season with salt to taste. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 18-20 minutes, or until the rice is cooked and has absorbed all the liquid.
- Remove the skillet from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork.
- Garnish with fresh cilantro and serve with lime wedges on the side.
