Mexican Turkey and Spinach Stuffed Peppers

This recipe is a delightful fusion of Mexican flavors and comfort cooking, perfect for a cozy family dinner. The combination of ground turkey, spinach, and aromatic spices creates a filling that is both hearty and nutritious, making it an ideal dish for four people.
Ingredients
- 1 pound ground turkey
- 2 cups fresh spinach, chopped
- 4 large bell peppers
- 2 tablespoons tomato paste
- Salt and pepper to taste
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Cooking spray
Instructions
- Preheat the air fryer to 375°F.
- In a skillet over medium heat, cook the ground turkey until it's no longer pink, breaking it into crumbles as it cooks.
- Add the chopped spinach to the skillet and cook until it's wilted and the excess moisture has evaporated.
- Stir in the tomato paste, cumin, chili powder, salt, and pepper. Cook for a few minutes to allow the flavors to meld.
