Mexican Turkey and Spinach Stuffed Peppers

This recipe is a delightful fusion of Mexican flavors and comfort cooking, perfect for a cozy family dinner. The combination of ground turkey, spinach, and aromatic spices creates a filling that is both hearty and nutritious, making it an ideal dish for four people.

Ingredients

  • 1 pound ground turkey
  • 2 cups fresh spinach, chopped
  • 4 large bell peppers
  • 2 tablespoons tomato paste
  • Salt and pepper to taste
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Cooking spray

Instructions

  1. Preheat the air fryer to 375°F.
  2. In a skillet over medium heat, cook the ground turkey until it's no longer pink, breaking it into crumbles as it cooks.
  3. Add the chopped spinach to the skillet and cook until it's wilted and the excess moisture has evaporated.
